Looks delicious. I have never heard of Stichelton cheese, but I use English Stilton & French Bleu often in my cooking. I think this cheese would be fantastic (melted) on a blackened medium-rare Rib Eye steak.

My father imported British cheeses in bulk wheels to Canada in the late 1950s and 1960s, distributing it to supper clubs and customers in and around Toronto. While I loved Cheshire, Lanceshire and British Cheddar, I never cared for Stilton with its cat poo smell. This Stichelton had a more delicate taste and smelled better.
