IMHO it all comes down to marketing and earning money.
Now that we have entered a period when all downtrodden paths are taken, manufacturers will have a hard time trying to find out on what models they will have to spend their money first, to be able to earn on it later.
For example practically all Ferraris are produced by now, at least the regular ones.
Coming up are the really exotic cars, made in far fewer quantities for the true collectors.

BOS subjects
It is odd to me what they choose, but I have to admit, their subject matter has me more excited to see what they'll come up with next than just about any other company out there.
On one hand, I think my very first CMC will be their Talbot Lago. I believe if any car design deserves the CMC treatment, it would be that. However, BOS provides me with surprises and cars I'm anticipating on an almost monthly schedule. A '73 New Yorker? A Jeep Honcho??? I'd never have believed I'd see these replicated in 1/18, yet BOS does it, and I'm so happy they do.
Regarding your list, I would love to see a two door hardtop '65 and '69 Impala. Ertl did make a '66 two door sedan, and I've always wondered how hard it would be to take that and Hot Wheels' "lowrider" '65 convertible to make a '65 sedan.
And to answer your question, I have some theories, but I don't know if they hold water. I believe they're going through full size Chryslers and Imperials first. It also looks like they may be dipping their toes into the compact market with their '60 Valiant. It wouldn't make sense for them to touch the muscle car B-bodies, but I would greatly love to see a '71 Coronet 4 door sedan, maybe a '68-'70 Coronet four door sedan... cars that were never muscle cars, but bread-and-butter family cars that could easily be turned into police cars. Given their recent releases of mid-70s Mopars, it wouldn't surprise me at all if they developed a Cordoba. I know I'd buy one!
They've released the '64(?) Vista Cruiser and have posted pics of an upcoming '71 or '72 Vista Cruiser (which is also on my purchase list, provided they keep the stock wheels)... as well as their "clamshell" Buick wagon and their '59 Buick ambulance. Personally, I'd love to see them expand into the Colonnade body style; a '73 Malibu or El Camino, or Cutlass would be great. Plus they're doing a bunch of Cadillacs, so a mid-70s Sedan DeVille is probably on the roster as well.
Now, Fords... they've released the '79 Ranchero and the Lincolns... but I can't recall much else. The '68-'71 Mark III would be great in black. The Starsky and Hutch Torino has been done, but I'd like to see a '74-'76 Elite, and the same years' Mercury Cougar.
With the Jeep Honcho and their '50(?) Jeep pickup, it'd be nice to see them expand into the AMC stable. A Gremlin, a Pacer...
Anyway, sorry. All I meant to say was, to me it seems as though they're going with full-size cars (and a compact) from Chrysler, full and midsize wagons from GM, and full and midsize cars from Ford. And random Jeeps. 
But no matter what, I'm a fan of their work and love to see what they've got coming up next!

Zack, Love the reply and thats what I was hoping to hear...
I agree and being my full time business is modifying and repainting 1/18 scale replicas I say the more the better. I quoted a 73 Imperial last week, we will see if that happens.
Anyway, the 69-71 Mark III is SOOOOOOO badly needed IMHO that I would buy them just for my own collection and I'm really picky. But having owned both a Black 70 and Burgundy 71 I have a special place for them.
I too cannot wait to see what else comes. The later model Vista Cruiser will be a great seller but only if its correct.
I mentioned in a completely different post how quality is hit and miss. I always wanted one of the 87 Rolls Royces and after getting a 49 Caddy 62 Series and 70 Range Rover in to repaint I was excited about BOS models, then I had a customer order a 87 RR for a repaint and when it arrived I was rather disappointed. If there quality can stay strong I think they could make a Pinto and it would sell.
