IMO.....use puree for the tomato pourover......prepared rolls into covered casserole or electric roaster, liberally brushed with rendered bacon fat......long,slow cook to 170°F......cool,uncovered, on stove top (or out on the screened porch in wintertime) several hours.....chill in fridge thoroughly over night.....next day,slowly bring center up to 160° F......change into your eating clothes and call in sick to workÂ
