Lump me in with the guys who use point and shoot.
I just have a humble little Fugiflim 2500 Fine Pics P&S camera. What I use after the shoot is Paint Shop Pro X2. I lighten or darken if needed, then move on to Advanced editing. I sharpen, than clarify and crop and maybe the frame thing. That's about all I do.
