It stands for SPiced hAM. Pork and ham is in it and, I guess, spices and what not. The Hawaiian people LOVE the stuff. They make all sorts of dishes with it and I have to tell you, it's WAY better than poi!
I have not eaten Spam in 60 years but I liked it better than the shingle topping.
I enjoy some Spam and eggs every now and then. I'd eat more except for the stratospheric sodium content.Â

My father used to talk about eating SOS while in the Army. I don't remember what it was but I think there was dried beef in it, At Ramstien AB, we had an Army chow hall and an Air Force chow hall. I would eat breakfast at the Army midnight chow before heading to work. I don't remember seeing anything that looked like SOS on the chow line though.

You're correct; it's creamed chip beef, or as you mention, dried thinly-sliced beef with white cream gravy, on toast.
