@jack-dodds, BARBARIAN! Hunting harmless, innocent little birdies. I buy mine from the supermarket, where no animals are made to suffer to fill our stomachs. Furthermore, I only buy the ones that have had their GMOs removed. I don't know what GMOs are, but the ones without them are more expensive, so I figure they're better...somehow.
I used to hunt in Texas. Gave it up when I moved to Tennessee 35 years ago. My deer and birds were organic - no genetically modified junk for me. My favorite birds were Bobwhite quail, ring-neck pheasant and mourning dove, in that order.
Not to be overly critical Tony but here is a pic that was anonymously emailed to me today. I am told these two Texas based doves are still sad and commiserating over how you shot their Pa years ago. Hey, no judgement....just thought you should know in case they show up in your yard with some others one day a la Alfred Hitchcock.
P.S. It's your call of course, but in the future you may want to only shoot "evening" or "afternoon" doves. I understand they are less apt to hold a grudge as they tend to get more sleep and thus are generally less irritable.

The consumption of a being based on their financial standing and/or position in any social structure is something I find abhorrent....whatever that means (it has nothing to do with prostitution...I know that much). Bottom line...I generally stay away from it, even after a few beers.
See; there's the problem right there. The sophisticated palate would never (deliberately) mention beer with pheasant. The discerning chef would ONLY serve the succulent bird with a fine prosecco.

At the risk of seeming like a poser, I must say that I like a good bottle of bourgeoisie with Fried bologna, Kraft Dinner and baked beans....no 'working class" peasant food for me.
