a little fat does a long way Frank.....I agree.....I use mostly olive oil at home but on those occasions when I get a Pork Butt or a full Picnic Ham I render ALL the fat and eventually use it one way or anotherÂ

John, I guess old dogs are never too old to learn something. And I just did.
To me all fat is lard and I can't imagine dining on a piece of it as if it is a good steak. My grandmother would give me her steak in return for my fat and she also ate lard sandwiches. I cringe when I think about that. I can't stand the taste of fat in my mouth, especially if it is gristly. I will eat around the fat on a piece of bacon and I usually trim off most fat on meat before cooking/eating it. However, I have learned that leaving a little on a steak does make the steak taste better.
With your post in mind I decided to do a little investigating about why the Koreans love fat so much.
