Extremely difficult for me...The neighbor who lived directly across the street from us had bought a brand new '57 in the same color combo as pictured. The '56 and '59 are in a tie for second place.

Through no fault of your own, (the photos match the cars up well) but aren't great photos. I'll take 1957 because it looks more lithe.

I like all these Cadillacs but as you ask I’ll pick one! The 1957 for me. The 56 is a bit bulbous and the 59 a bit over the top. Not to say I dislike either of those years just of the 3 I prefer the 57

Well, since that 1959 Cadillac is "my car" the choice is simple. My 1959 Cadillac Coupe de Ville (that I foolishly sold) was that very color, "Gotham Gold" with no optional "Dover White" painted top but a "Fawn Beige" interior. Like an idiot, I sold it to make room for other collector cars.... dumb, dumb, dumb, dumb, dumb, dumb, dumb, dumb, dumb... 😫 😫 😫
The '57 is my fave Cadillac of that decade. The '56 is a strong second and the '59 a distant third.
Have to go with the 56’ thigh mine was pink with a white roof it was the only caddy I ever owned, wouldn’t mind having one now,☺️

The color you refer to on the '57 is really attractive. I have always referred to it as "Dentyne".
