I’m going with the 1963 here. I like the styling of all three but my discomfort with the 1961 and 1962 is to do with front windshield distortion. Driving these two it was very noticeable at the right and left edges. I noted an improvement in that area on the 1963. But for this, the cars would be a tie.
OLDSMOBILE'S! Now we're talking! In 1962, GM fixed the oddities of the '61's "pointy" rear fenders. By doing so, the '62 became "the car" (my opinion) for the entire GM line-up. The '63 lost a little of the styling beauty of the '62, but it was still a "looker" that year.
As a side note, I personally owned a '62 Starfire, it's my favorite care I've ever owned. I also owned a '63 Holiday, and it ranks 3rd on my list of cars I've owned.

The '62 Starfire was the best-looking full-size Oldsmobile ever produced, IMHO.
The '62 wins by a mile; most beautiful Olds of that decade. The '61 is second; '63 third.
'62 the best ever Olds, '63 second all time favorite, '61 not favored rear treatment.
All three look great, but I like the '62 best, followed by the '61.

I have owned a 61 which I restored and a 62 hardtop which was my wife's daily driver for several years. My choices are the 61,62 and 63.
For me the 63, 61 and then the 62. As for the distorted windshield, this allowed for better view of the birds flying by. LOL.

The side trim on all three years of Oldsmobile Starfire shown really help its overall appearance; especially the '62.
I am a fan of the original '61 Starfire. I kinda like those rear fender flares that GM had going that year! The '62 model gets my second place ranking.
They are certainly all beautiful convertible Oldsmobiles. Very nice cars !

Sadly I don't have photos of my '62 Starfire (but it looked exactly like the photo below...only mine was maroon. I do however, have photos of my '62 Holiday Ninety-Eight.
