I like all three and have multiples in 1:24. For personal reasons my #1 vote would be 1960, followed by 1959 then 1961. It was late 1959, parents recently divorced and Mom moved us to San Francisco. He boyfriend Tony had preordered a 1960 Impala conv. white w/red interior. He must have received it just after the 1960s models went on sale as people would come up to the car and look. I liked to just sit in the car, top down, parked on a SF street, wearing my sunglasses at age eight. Wonderful memories of Northern California road trips, riding in the backseat w/top down, feeling like a star with handsome Tony and beautiful Mom in the front seat. It was like living in a Doris Day movie. My DM white 1960 Impala conv. is so special to me I had a diecast master adjust the ride height to make it perfect.
@perrone1 Fair enough Tony, like they say, beauty is in the eye or the beholder. I think unibrows are sexy!
I like them all for different reasons, I don’t want to vote a tie, so for now I’ll take ‘61, ‘60 & ‘59.

@kevins What a beautiful companion Kev. I miss our Hunter.😥
She’s not mine Geno, found the pic online. I’m not sure I could face that face on a daily basis!
3-way tie for sentimental reasons.
Gents thanks for your responses.

They are all attractive Chevrolets and I am happy to have diecast replicas of all of them. Especially for the 1959 version, one can hear Dinah Shore singing the theme song and that they were "All new all over again !"
